 Orange gauzy sunlight in the apartment - one of my favorite things. The other? That little brown dog (I swear he's happy but this picture makes me laugh).

Hope you guys had great weekends! Our happenings included a chili cook-off (very random) and a Fasnacht (carnival) party. Jen and I managed to throw a costume together in under 24 hours...which is impressive (for me) so stay tuned for pics ;)

Zucchini Bars w/ Cream Cheese Frosting


Ok, so...I never really thought I'd be one to post recipes - but only because cooking was always sort of a 'have to' kind of thing - one that I never really enjoyed. Fast forward to living in Switzerland with a lot of time on my hands + some friends who make amazing things = an inspired girl. I've even learned the key ingredient to all foods - wine. Ok, well not the zucchini bars...but most things. And really, it doesn't even have to go in the food - as long as you have a glass nearby! (ammiright?)

This recipe actually comes from Marks aunt - and we make it over and over again. It's...incredible.

Cooking time: 35-40 minutes / Preheat oven to 350

Zucchini Bars
2 C. Sugar * 4 Eggs * 2 Cups Grated & Shredded Zucchini * 1 C. Vegetable Oil * 1 tsp. Baking Soda *2 C. Flour * 1 tsp. Baking Powder * 1 tsp. Cinnamon * 1 tsp. Vanilla * 1/4 tsp. Salt

1. Mix together all ingredients and bake in a 10x15 pan at 350 for 35-40 minutes. 

Cream Cheese Frosting
4oz. (or 3) of Cream Cheese * 1 1/3 C. Powdered Sugar * 1/2 Stick of Butter *1 tsp Vanilla

1. Mix together - Spread over Zucchini Bars when they have cooled.

Keep refrigerated.
