Pinterest Food Try: Apple and Chicken Omelet

On my first day back to a whole30 way of life (after a couple months of vacations, visitors, hedonism) I tried this recipe from my whole30 breakfast pin was SO delicious and somehow I ended up with a huge omelet and have leftovers. I'd definitely recommend this (I poured about 6 eggs in to the pan and used spinach)

Apple and Chicken Omelet (my slightly altered version)

+ 1 tsp coconut oil
+ small chicken breast
+ 1 golden delicious apple (peeled, cored, sliced)
+ frozen spinach or wilt spinach (use as much as you'd like)
+ 6 eggs, beaten
+ hazelnuts (lightly toasted, crushed) (I didn't toast them)

1. Add coconut oil to the pan over medium heat
2. Add the chicken, sprinkle with salt/pepper and sautee until golden brown
3. Add apple and cook until soft (about 30 seconds)
4. Add spinach and wilt/cook until warmed
5. Pour in the beaten eggs and sprinkle the hazelnut on top
6. Cover pan loosely and cook on lower heat until eggs are set
