Pinterest Food Try: Apple and Chicken Omelet

On my first day back to a whole30 way of life (after a couple months of vacations, visitors, hedonism) I tried this recipe from my whole30 breakfast pin was SO delicious and somehow I ended up with a huge omelet and have leftovers. I'd definitely recommend this (I poured about 6 eggs in to the pan and used spinach)

Apple and Chicken Omelet (my slightly altered version)

+ 1 tsp coconut oil
+ small chicken breast
+ 1 golden delicious apple (peeled, cored, sliced)
+ frozen spinach or wilt spinach (use as much as you'd like)
+ 6 eggs, beaten
+ hazelnuts (lightly toasted, crushed) (I didn't toast them)

1. Add coconut oil to the pan over medium heat
2. Add the chicken, sprinkle with salt/pepper and sautee until golden brown
3. Add apple and cook until soft (about 30 seconds)
4. Add spinach and wilt/cook until warmed
5. Pour in the beaten eggs and sprinkle the hazelnut on top
6. Cover pan loosely and cook on lower heat until eggs are set

The World Dinnerware Collection

Hey Monday! It is Monday, which is first day back to reality in a few weeks, my girl isn't here, I'm back to working normally, no traveling...SOB...but it will be ok. Oh, and hey whole30. Anyway.

Last week when I was in Milan, I visited the Design Supermarket (located on the bottom floor of la Rinascente - an upscale department store right next to the Duomo). The whole bottom floor is dedicated to new and innovative design/decor items and its always changing based on the scene...there were SO MANY cool and interesting things! ("so many thiiiiiiings" we kept saying in excitement). From notebooks, quirky items for your office, childrens design, stools, cookware, mugs, bags, lamps, desks...literally, everything. It was a design bloggers heaven I think. If you are in Milan you can't miss this. And while you're there head to the very top floor for a rooftop bar looking on to the Duomo! (because you'll need a drink after all the money you spent)

Anyway, these mugs were featured there - I bought a green Rome one (because there was. no. milan. which. is. my. favorite. city!) They are from The World Dinnerware collection by Seletti - which also offers plates, etc. Very cool!

Making Memories

Happyyyy Friday!
Well, my friend who was visiting left this morning and now I'm so sad. We've been friends since middle school and this past 2 weeks with her flew by...when living in a foreign land, its so precious to have a huge piece of home near for 2 whole weeks - someone who knows you, your family, your dorky middle school self, and who has been there through all life transitions. So now I'm all sentimental, but I had the most amazing time showing her paris, cinque terre and milan...long train rides, tons of laughs, drinks, late nights, lots of walking, new people. Here's where I start sobbing hysterically. Come back Kelli!!!!!!!!

Anyway, I guess now its back to reality...and probably and food, spending and alcohol detox, ha!

Have a great weekend....I'll be cleaning up and spending time with my boys ;)

While I stall a little with blogging since my friend is still here and we are buuuusy!... I'm showing you my new shoes that I'm in love with. Are converse a thing where you live? They are very popular here. I'm usually not one to go with outright fads, but I couldn't resist these - and chose the high top version because maybe they aren't as typical? I don't know! But they are fun.

And...that's enough about my shoes....

Solid Perfume

Hey friendos, apologies for the quietness around these parts. My friend is visiting and we just went on a whirlwind little trip around for about 6 days and just got back! She's one of my bff's from way back to middle school and it was SUCH a good time - I don't think I've laughed so hard in awhile. AND, we didn't even get sick of eachother, ha!

Anyway, along my travels I was reading a magazine and it talked about these solid perfumes from Diptyque Paris 'and they sound so awesome, I really want to try them. They would be perfect for traveling!

Santorini (part uno)

I can't really describe how wonderful it was to be in Santorini, it was pretty much just like I imagined. Marks mom and sister were amazing to us and flew over to spend a week with Wesley while we went away for an anniversary vacation. It was heaven... . My favorite part was simply laying by the pool and reading books about Greece and also Game of Thrones, because I am boring like that. But then my other favorite part was renting scooters and driving around the island...even though the rental guy tried to talk me out of it because he thought I wouldn't hack it....WHAT EVEN! (It was kind of scary though...)

3 Months Post Whole30 :: Thoughts

Well, its been 3 months since I completed my first Whole30. You can read my "final thoughts" here and see some of my favorite recipes here. (For those who don't know, Whole30 is 30 days of no carbs, sugar, alcohol, dairy, grain, legumes, processed food).

I wanted to check in because I was reading through some of the stuff that I said in those of which was "I won't say it changed my life or anything..." and I had to stop right there and bring it up again. Because 3 months post Whole30 I can indeed say that it has DEFINITELY changed my life.

I wish I could say that I've continued the Whole30 eating style consistently since then but that would be a total lie (damn you switzerland and your fresh baked breakfast bread with the chocolate chips in it right on the way to my train!).

But...BUT! The way I eat has changed. For the past month and a half I've had 2 sets of visitors, I've gone on 3 vacations out of the a week in Greece where i did not hold back on tasting the local cuisine - so its been difficult to plan meals (it takes a lot of planning to eat whole) and I haven't focused as much on it. But I find that I've maintained the 15lb weight loss (+4 more lbs after I finished)....I consistently choose menu items that are as close to whole foods as I can, dairy is non existent in my diet, desserts just aren't worth it anymore (they are an every now and then treat (or everyday if you're in Greece on vacation ;)) and I just crave that Whole30 feeling in general so I choose food that gets me as close to it as I can.

That detoxed feeling...and the feeling of only feeding your body whole pure healthy things is unbeatable. I can't get it out of my head. Everyday I want that again - even though I continue to "fail", I also choose that way of eating as much as I can and I know I'm better for it. And, I can't wait to do another Whole30 (when my last visitor leaves in August)...September Whole30, I'm looking at you!

So yes, it has changed my life...I will never look at food the same again. Because now I know that when I'm feeling tired and lazy and have no energy....that it is directly related to what I'm eating. And that, my friends, is control. I don't have to feel like that. And more often than not...I won't.
