Thai Chicken Enchiladas

These Thai Chicken Enchiladas are hands down, one of my favorite things to make, so I had to give them a shout out and share the recipe with you. (they are also definitely a dinner guest pleaser + easy)
(pictures and recipe via how sweet it is because i was too lazy to take my own as I made it this time)

Looks beautiful. You use flour tortillas. I love corn better..but here everyone loves flour tortillas.

A family favorite here is King Ranch Chicken. Its one of those things that taste even better the day after.
