Zucchini Bars w/ Cream Cheese Frosting


Ok, so...I never really thought I'd be one to post recipes - but only because cooking was always sort of a 'have to' kind of thing - one that I never really enjoyed. Fast forward to living in Switzerland with a lot of time on my hands + some friends who make amazing things = an inspired girl. I've even learned the key ingredient to all foods - wine. Ok, well not the zucchini bars...but most things. And really, it doesn't even have to go in the food - as long as you have a glass nearby! (ammiright?)

This recipe actually comes from Marks aunt - and we make it over and over again. It's...incredible.

Cooking time: 35-40 minutes / Preheat oven to 350

Zucchini Bars
2 C. Sugar * 4 Eggs * 2 Cups Grated & Shredded Zucchini * 1 C. Vegetable Oil * 1 tsp. Baking Soda *2 C. Flour * 1 tsp. Baking Powder * 1 tsp. Cinnamon * 1 tsp. Vanilla * 1/4 tsp. Salt

1. Mix together all ingredients and bake in a 10x15 pan at 350 for 35-40 minutes. 

Cream Cheese Frosting
4oz. (or 3) of Cream Cheese * 1 1/3 C. Powdered Sugar * 1/2 Stick of Butter *1 tsp Vanilla

1. Mix together - Spread over Zucchini Bars when they have cooled.

Keep refrigerated.

I want to try these! My friend, Ann, has a plot in a community garden and grows a lot of zucchini. She's always giving us free veggies. So much that I don't know what to do with it all. This is a great idea!

I forgot that yours is black and white and I hope you don't think it's too similar (can be annoying when people do that, right)! Funny, I don't enjoy eating zucchini all that much but I love zucchini bread and muffins so I'm certain this would rock my boat. Going to have to figure out a gluten-free alternative, or I'll just eat the frosting with a glass of wine, that might work too.

it didn't ACTUALLY catch fire, but the flames did leap from the pan clear to the ceiling. it was a brief (thank gawd) but terrifying experience.

and i'm a little shocked/nervous it didn't trigger our whole house sprinkler system. i guess it musta been just a second or two flare up, but in my agony it seemed to stretch on and on...

but yeah, in hindsight, totally hilarious. and made me finally acknowledge how utterly FAIL i am in the kitchen.

zucchini's??? really...I guess it is like carrot cake, make it sound weird but add lots of sugar and cheese cream icing and you've got yourself a great cake! well considering I've jus been having full english breakfast for the past 3 days and loads of heavy stuff I'll pass on until next week!
